Tumis Tahu Brokoli
Bahan ( Ingredients ) :
- 1/2 buah bawang bombay
- 2 siung bawang putih, diiris tipis
- 1 buah paprika merah, dipotong panjang
- 150 gr brokoli, dipotong-potong
- 200 gr tahu sutra, dipotong kotak 2cm, goreng
setengah matang
- 5 buah jamur kuping, direndam, dipotong-potong
- 3 sendok makan kecap teriyaki
- 2 sendok makan saus tiram
- 1 sendok makan kecap inggris
- 1/2 sendok teh garam
- 1/2 sendok teh merica bubuk
- 100 ml kaldu
- 2 sendok makan minyak untuk menumis
Cara Membuat ( Instructions ) :
- Tumis bawang bombay dan bawang putih hingga layu.
- Masukan paprika merah, aduk-aduk sebentar.
- Tambahkan brokoli, tahu sutra, dan jamur kuping, aduk
sampai setengah matang.
- Tuang kecp teriyaki, saus tiram, kecap inggris, garam,
dan merica. aduk rata.
- Masukan kaldu, masak sambil diaduk hingga bumbu meresap.

TUMIS TAHU BROKOLI
AYAM WOKU DI BELANGA

Ayam Woku di Belanga
Bahan ( Ingredients ) :
- 1 ekor ayam kampung, potong 8 atau 12 bagian
- 5 sendok makan minyak goreng
- 10 siung bawang merah
- 1 genggam daun kemangi
- 1 batang sereh, dimemarkan
- 2 lembar daun jeruk
- 1 buah tomat, iris kasar
- 1 ruas jari jahe, dimemarkan
- 10 buah cabai merah
- 20 buah cabai rawit, biarkan utuh
- Daun melinjo secukupnya
- 1/2 lembar daun kunyit
- 1 sendok makan garam
Cara Membuat ( Instructions ) :
- Haluskan bawang, cabai merah, jahe, garam.
- Panasakan minyak, masukan semua bahan, aduk rata
dan tutup wajan selama kurang lebih 3 menit, aduk
seklai lagi.
- Tambahkan dua gelas air panas dan masak sampai ayamnya
empuk.
- Sajikan Panas.

Cah Sawi Bumbu Wijen
Bahan ( Ingredients ) :
- 200 gr udang jerbung, dikerat punggung
- 600 gr sawi putih, dipotong-potong
- 5 buah jamur hioko, direndam lalu dipotong 3 bagian
- 3 siung bawang putih, dicincang halus
- 2 cm jahe, dimemarkan
- 2 sendok makan kecap ikan
- 1/2 sendok makan teh merica bubuk
- 1/2 sendok teh garam
- 1 1/2 sendok makan wijen sangrai
- 2 sendok makan minyak wijen
Cara Membuat ( Instructions ) :
- Tumis bawang putih dan jahe hingga harum dalam
minyak wijen.
- Tambahkan udang sambil diaduk hingga berubah warna.
- Masukan sawi putih dan jamur hioko, aduk sebentar.
- Tuangkan kecap ikan, merica, dan garam sambil diaduk.
- Taburkan wijen, aduk lalu angkat dan sajikan.

AYAM GORENG PEMUDA

Ayam Goreng Pemuda
Bahan ( Ingredients ):
1 ekor ayam buras, potong 4 bagian
750 ml air kelapa
250 ml air
1 lembar daun salam
Haluskan:
4 siung bawang putih
2 siung bawang merah
1 butir kemiri
½ sdt merica butiran
1 sdt gula pasir
1 sdt garam
Cara membuat ( Instructions ) :
1. Masukkan ayam dalam panci. Beri bumbu halus, air kelapa dan air.
2. Masak di atas api kecil hingga daging ayam lunak. Angkat.
3. Goreng dalam minyak panas dan banyak hingga kering. Angkat dan tiriskan.

MEXICAN CHICKEN CASSEROLE

Mexican Chicken Casserole
Ingredients :
- 4 boneless, skinless chicken breasts
- 1 small onion
- 12 flour tortillas
- 1 1/2 cups grated cheddar cheese
- 1 (10 ¾ oz.) can cream of mushroom condensed soup
- 1 (10 ¾ oz.) can cream of chicken condensed soup
- 1 cup sour cream
- 1/2 cup canned chopped jalapeno peppers, drained (or 4 fresh jalapenos)
- 1 cup tomato salsa
Instructions :
1. Preheat oven to 300°.
2. Cut the chicken into 1-inch cubes. Peel the onion and grate using the fine side of a vegetable grater. Tear the tortillas into eighths.
3.Combine the onion, cheese, soups, sour cream, and jalapenos in a medium-sized bowl. Make layers in a casserole dish using 1/3 of the corn tortillas, soup mixture, chicken, then salsa. Repeat twice, in that order.
4.Cover and bake for 2 hours.

LAMB KEBABS

Lamb Kebabs with Tomatoes, Peppers, and Onions
Kebab pieces:
- 1 lb. lean lamb, cut into 1-inch cubes
- 1 pint cherry tomatoes
- 3 red or green bell peppers, seeded and chopped into quarters
Marinade for lamb:
- 2 medium onions, chopped
- 2 cloves garlic
- 1/4 c. lemon juice
- 2 tsp. salt
- 1 tsp. cumin
- 1 tbsp. olive oil
Instructions :
1. To make marinade, put chopped onions, crushed garlic, lemon juice,
salt, cumin, and olive oil into a food processor and puree.
2. Transfer mixture to a bowl and add lamb pieces. Stir to combine, cover
with plastic wrap, and refrigerate for at least 6 hours.
3. If grilling kebabs, ask an adult to light the grill about 45 minutes
before you are ready to cook, or to preheat the broiler about 5 minutes
beforehand.
4. Thread lamb pieces, tomatoes, and
pepper chunks onto skewers, alternating ingredients.
5. Grill or broil for 6 minutes on each side.
6. Use a fork to slide cooked lamb and vegetable pieces from skewers onto
a plate. Serve with yogurt and flat bread.
Preparation time: 10 minutes

CANTONESE ROAST DUCK

Cantonese Roast Duck
Ingredients :
1 duck, about 5 pounds, fresh or frozen
1 tablespoon salt
1 scallion
3 slices fresh ginger
Glaze:
1 tablespoon light corn syrup
2 tablespoons water
1 tablespoon soy sauce
Few sprigs fresh cilantro, for garnish
Instructions :
1. Thaw the duck, if frozen. Remove any excess fat, and rinse and pat dry
with paper towels. Rub the entire surface of the duck, inside and out,
with the salt. Cover and refrigerate for several hours, or, overnight.
2. Put the scallion in the cavity and lay the slices of ginger on top of
the duck. Add at least 2 inches of water to a large flameproof roasting
pan with a lid and put the pan on the stove. Place a large rack in the
roasting pan and bring the water to a boil. Choose an oval casserole large
enough to hold the duck and small enough to fit into the roasting pan.
Place the duck in the casserole and then put the casserole on the rack.
Cover and steam for 1 hour, checking the water level from time to time
and adding more boiling water if necessary. Save the duck broth to use in
soups or stir fry dishes. When done, remove the duck from the casserole
and place it on a rack to dry.
3. Combine the ingredients for the glaze in a small saucepan and bring to
a boil. With a pastry brush, paint the hot glaze over the surface of the
duck. Allow duck to dry for 1 hour.
4. Preheat the oven to 375F. Roast the duck, breast side down, for 20
minutes. Turn over and continue to roast for 40 more minutes.
5. Transfer duck to a chopping board and allow to cool slightly. Using a
cleaver, disjoint and cut the duck through the bone into bite size pieces.
Arrange the pieces on a serving platter, garnish with cilantro and serve.

LO MEIN

Lo Mein
Ingredients :
4 cups cooked Chinese noodles (or very thin spaghetti)
rinsed and drained
12 oz. diced cooked meat (beef, chicken, pork ... any)
1 package frozen French−style green beans, thawed
2 cups fresh bean sprouts
3 scallions, chopped
1 slice ginger, shredded
1 clove garlic, minced
1 teas. MSG (Accent)
1 teas. sugar
1/4 cup soy sauce
3/4 cup vegetable oil
1/4 teas. sesame oil
2 Tbls. sherry
Instructions :
Mix together MSG, sugar, and soy sauce. Set aside.
Heat wok or pan hot and dry. Add just 3 tablespoons of the
vegetable oil and all the sesame oil. Put in ginger and garlic to
brown first, then all the other vegetables.
Stir and cook for one minute over high heat. Add the sherry. Cover and cook one
minute longer. Turn off heat. Remove vegetables, and drain;
discard these juices. Set drained vegetables aside.
Heat wok or pan dry again. Put in remainder of oil. Turn heat
to medium.
Add cooked noodles and stir constantly to heat through and to coat the noodles with oil for a couple minutes.
Add your choice of meat and reserved vegetables; mix
thoroughly.
Add reserved soy sauce mixture and stir until
noodles become one even color. Serve.

HOISIN BEEF & SCALLION ROLLS

Hoisin Beef & Scallion Rolls
Ingredients :
1 whole flank steak
1/2 cup soy sauce
3 cloves garlic
1/2 cup ginger −−chopped, fresh
dash black pepper
1/2 cup hoisin sauce
1 bunch scallions
Instructions :
In a shallow dish, mix together the soy sauce, oil, garlic, ginger, and
some pepper.
Add the beef and marinate overnight in the refrigerator,
turning once. Heat the broiler.
Pat the marinated meat dry and broil
the steak, about 4 inches from the heat, until rare, 5 to 6 minutes
per side.
Cool completely and then slice very think on the bias, across
the grain of the meat.
Trim the slices to form approximately 2 x 4 inch
strips.
Brush a thin layer of hoisin sauce on each strip of beef.
Lay a small bundle of scallion julienne at one end and roll up securely.
Arrange on trays, seam side down, cover tightly with plastic wrap
(make sure the plastic is in close contact with the beef),
and refrigerate until time to serve.

GENERAL TSAO'S CHICKEN

General Tsao's Chicken
Sauce:
1/2 cup cornstarch
1/4 cup water
1+1/2 tsp minced garlic
1+1/2 tsp minced ginger root
3/4 cup sugar
1/2 cup soy sauce
1/4 cup white vinegar
1/4 cup cooking wine
1+1/2 cup hot chicken broth
1 tsp monosodium glutamate (optional)
Meat:
3 lbs deboned dark chicken meat, cut into large chunks
1/4 cup soy sauce
1 tsp white pepper
1 egg
1 cup cornstarch
Vegetable oil for deep-frying
2 cups sliced green onions
16 small dried hot peppers
Intructions :
Mix 1/2 cup cornstarch with water.
Add garlic, ginger, sugar, 1/2 cup soy sauce, vinegar, wine, chicken broth and MSG (if desired). Stir until sugar dissolves. Refrigerate until needed.
In separate bowl, mix chicken, 1/4 cup soy sauce and white pepper. Stir in egg.
Add 1 cup cornstarch and mix until chicken pieces are coated evenly. Add cup of vegetable oil to help separate chicken pieces.
Divide chicken into small quantities and deep-fry at 350 degrees until crispy. Drain on paper towels.Place a small amount of oil in wok and heat until wok is hot. Add onions and peppers and stir-fry briefly.
Stir sauce and add to wok. Place chicken in sauce and cook until sauce thickens.

HUNAN BEEF

Hunan Beef
Ingredients :
2 cups broccoli florets
2 tablespoons cooking oil
2 teaspoons minced garlic
4 small dried red chilies
1 teaspoon cornstarch dissolved in 2 teaspoons water
Marinade:
2 tablespoons soy sauce
2 teaspoons cornstarch
1 tablespoon Chinese rice wine or dry sherry
3/4 pound flank steak, thinly sliced across the grain
Sauce:
3 tablespoons Chinese black vinegar or balsamic vinegar
1 tablespoon soy sauce
1 tablespoon Chinese rice wine or dry sherry
2 teaspoons sugar
2 teaspoons chili garlic sauce
1 teaspoon sesame oil
1. Combine marinade ingredients in a bowl. Add beef and stir to coat. Let
stand for 10 minutes.
2. Combine sauce ingredients in a bowl.
3. Place broccoli in a large pot with 1 inch of boiling water. Boil until
tender−crisp, 2 to 3 minutes; drain.
4. Place a wok over high heat until hot. Add oil, swirling to coat sides. Add
garlic and chilies and cook, stirring, until fragrant, about 10 seconds. Add
beef and stir−fry until no longer pink, 1 1/2 to 2 minutes.
5. Add broccoli and sauce to wok; bring to a boil. Add cornstarch solution
and cook, stirring, until sauce boils and thickens.

MARBLE PUDING BUSA

Bahan ( Ingredients ) :
- 900 ml susu cair
- 2 bungkus agar-agar bubuk
- 200 gr gula pasir
- 8 putih telur
- 4 kuning telur
- 500 gr mentega, dilelehkan
- 100 gr dark cooking chocolate, dilelehkan
Cara membuat ( Instructions ) :
- Rebus Susu, agar, dan gula sambil diaduk sampai mendidih.
- Tuang sedikt adonan dalam kuning telur, aduk rata lalu
masukan dalam adonan lagi, aduk sampai mendidih kembali,
tambahkan mentega cair, sisihkan.
- Kocok putih telur hingga kental.
- Tuang campuran puding hangat sedikit demi sedikit sambil
dikocok perlahan.
- Tim dark cooking chocolate hingga leleh dalam plastik
segitiga
- Tuang 1/4 bagian adonan ke dalam loyang tullban. Semprotkan
tim dark chocolate ke atas adonan puding, bentuk coret-coret.
- Tuang lagi 1/4 bagian puding, semprotkan lagi
cooking chocolate dan coret-coret, lakukan hal yang sama
sampai adonan habis, bekukan.

- 50 ml air daub suji dari 30 lembar daun suji dan

- 1400 ml santan dari 1 butir kelapa
- 200 gr gula pasir
- 1 sendok teh garam
- 2 bungkus agar-agar bubuk
- 3 tetes pewarna makanan warna hijau
Cara Membuat ( Instructions ) :
- Tumbuk daun suji dan daun pandan hingga lembut, lalu peras.
Kira-kira sampai 50 ml
- Tambahkan santan, gula, garam, agar, dan pewarna hijau
lalu rebus hingga mendidih.
- Tuang dalam cetakan lalu dinginkan.
- Potong-potong lalu sajikan.

- 1 sendok makan tepung maizena
- 500 gr gula pasir

- Untuk puding, blender sirsak dan susu sampai lembut.
- Tambahkan agar, gula ,dan pewarna.
- Masak sambil diaduk hingga mendidih.
- Tuang dalam cetakan lalu dingingkan.
- Untuk saus, masak bahan saus sampai mendidih, angkat
lalu dinginkan.

GARLIC CHICKEN

Garlic Chicken
Ingredients :
4 boneless, skinless chicken breast halves (about 1 lb.)
1 egg white
1 Tablespoon cornstarch
1 Tablespoon dry white wine or sherry
4 green onions
1 teaspoon minced gingerroot
3 teaspoons minced fresh garlic (about 6 medium cloves)
2 Tablespoons vegetable oil
Hot cooked rice
Sauce :
1 teaspoon crushed chili paste (sambal oelek) or more to taste
2 teaspoons sugar
1 teaspoon cornstarch
2 teaspoons rice vinegar
1 Tablespoon water
2 Tablespoons dry white wine or sherry
2 Tablespoons soy sauce
Instructions :
Place chicken breasts in freezer for 1 to 2 hours or until very firm
but not frozen solid. Slice crosswise into thin shreds. In small bowl,
lightly beat egg white, then mix in 1 TBS cornstach and 1 TBS wine,
stirring until cornstarch is dissolved.
Add chicken and mix well to coat
all pieces. Let stand at room temperature 30 minutes.
Meanwhile, slice green onions on the diagonal into very thin slices.
Mince gingerroot and garlic. Combine Sauce ingredients, mixing well.
Heat wok or frying pan, add oil, and stir−fry chicken until no longer pink.
Remove chicken with a slotted spoon. Add onions, ginger and garlic to
wok and stir−fry about 30 seconds, until ginger and garlic are fragrant
but not brown.
Return chicken to wok, restir sauce ingredients and add
to wok.
Cook, stirring constantly, until mixture is well combined, hot and
bubbly and thickens slightly.
Turn off heat and splash with about 1 tsp
of dark sesame oil.
Serve over rice.

CASSEROLE KAMBING

Resep daging : Casserole Kambing
Bahan ( Ingredietns ) :
- 400 gr daging kambing filet, potong dadu
- 3 sendok makan margarin
- 2 sendok makan minyak goreng
- 1 buah bawang bombay, potong kasar
- 2 sendok makan terigu
- 2 gelas kaldu kambing
- Garam dan lada halus secukupnya
- 12 buah prune ( kalengan )
- 1/2 kaleng buah aprikot ( tanpa air )
- 2 sendok makan air jeruk nipis
Cara membuat ( Instructions ) :
- Panaskan margarin dan minyak, tumis bawang bombay
sampai wangi.
- Masukan daging kambing, aduk-aduk sampai berubah warna
- Lalu taburkan terigu, aduk cepat, dan tuangkan kaldu,
biarkan mendidih dan daging kambing empuk.
- Setelah empuk masukan prune dan aprikot serta air
jeruk, aduk sekali lagi.
- Masukan garam dan lada halus cicipi rasanya,
harus cukup gurih.
- Angkat dan sajikan panas.

SERENGSENGAN KAMBING

Resep daging : Serengsengan Kambing
Bahan ( Ingredients ) :
- 1 kg daging kambing paha dan iga
- 100 gr bawang merah
- 1/2 sendok teh merica
- 1/2 sendok teh jahe yang sudah dihaluskan
- 2 siung bawang putih
- 1 sendok teh asam
- 100 gr mentega
- 5 sendok makan minyak goreng
- 1/2 sendok teh garam / menurut selera
Cara Membuat ( Instructions ) :
- Semua bumbu dihaluskan.
- Panaskan minyak goreng, tumis bumbu halus sampai
menguning.
- Masukan daging lalu tambahkan mentega, tuang 1- 2
gelas air.
- Rebus dengan api sedang sampai matang, empuk, dan
airnya mengering.
- Hidangkan panas-panas.
